Gluconic acid is the carboxylic acid formed by oxidation of the first carbon of glucose. It is also used as a sequestrant in cleaning, metal pickling and rust-removal formulations. It is also used as a set retarder in construction systems. Recorded grades include technical, food. Food use as E 574 is subject to the applicable food-additive specification and permitted-use conditions. Pharmaceutical use requires the applicable pharmacopoeia grade.
