Citric acid esters of monoglycerides, also called CITREM, are used as food emulsifiers. They stabilise water-in-oil emulsions in bakery and confectionery applications. The material is a pale yellow to ivory waxy solid or powder. The recorded grade is food. Packaging formats include 20 kg cartons, 25 kg bags and 500 kg big bags. Food use as E 472c is subject to the applicable food-additive specification and permitted-use conditions.
